With the dark nights drawing in, there’s no better time to get cosy on the sofa with a warming brew. If you’re looking for things to do with your leftover pumpkins, why not try a warming homemade pumpkin spice syrup:
Ingredients:
- 1 cup water
 
- 1 cup brown sugar
 
- 1/2 cup pumpkin puree (canned or homemade)
 
- 1 teaspoon vanilla extract
 
- ½ teaspoon ground cinnamon, nutmeg, and ginger.
 
- Pinch of salt
 
Method:
- In a saucepan, combine the water, brown sugar, and pumpkin puree. Heat over medium heat, stirring until the sugar dissolves and the mixture is smooth.
 
- Add the vanilla extract, spices and salt. Continue to heat for another 2-3 minutes, stirring occasionally.
 
- Remove from heat and let it cool. Strain through a fine mesh sieve to remove any solids.
 
- Store in an airtight container in the refrigerator for up to two weeks. Use in your hot drinks or as a drizzle over pancakes!
 
Maple Pumpkin Spice Syrup
Replace the brown sugar with maple syrup to make it a Maple Pumpkin Spice Syrup.
Pumpkin Spiced Latte
For a Pumpkin Spiced Latte, add a tablespoon (or more, to taste) of your pumpkin spiced syrup before your espresso shot. Texture and pour milk as usual. Top with a sprinkle of cinnamon.
